5-Minute Powerball Nut Truffles

Satisfy your 4 PM cravings with this delectable snack that is super easy and quick to put together and quick to vanish (in your tummy, that is). They are also a great after-school snack that will keep the children’s hunger in check and boost brainpower in the meanwhile.
The powerball nut truffles are a great source of protein, blood sugar balancing fatty acids, heart-healthy omega 3s and several micronutrients and minerals.
The inspiration for this recipe comes from my mother (and grandma before her). She used to make me a similar nut truffle of sorts for a quick boost of energy. I adapted the recipe to include more beneficial ingredients and did away with gluten and dairy.
This recipe is also very customizable. You can substitute the ingredients with nuts of your choice or gluten-free oats. If you are allergic or sensitive to any of the nuts, you can just swap them for seeds and seed butters. You can even play with the spices. Try adding cinnamon, nutmeg or even pumpkin spice to have that holiday flavor in your bites.
Here’s how it is done –
All you need is a high-speed blender or a food processor or some muscle to finely crumble the nuts (in which case it will take bit longer but totally doable). Blend the nuts and dates separately, add them to a mixing bowl and combine them with nut butter and spices. I have a neat trick for grinding the dates – blend them along with the last batch of nuts and they will not stick to the blender. You can even make the powerball nut truffles without the dates and they still taste incredible (Hello, Fat Bombs). Now, go ahead and make the balls and roll them over shredded coconut. There you have it! Powerball nut truffles are ready to be consumed. What a swift way to address your appetite!
Since this is a kid-friendly recipe, let them have some have fun rolling the balls. They could even choose their own “toppings.” Raw cacao, semisweet chocolate chips, crushed nuts, seeds or even gluten-free granola are all wonderful options to have. While it takes only 5 minutes to make the powerball nut truffles, you can make them in advance and in bulk for an entire week’s supply. Just remember to refrigerate them. Let’s get started!
Powerball Nut Truffles
Ingredients
- ¼ cup Almonds
- ¼ cup Walnuts
- ¼ cup Pistachios shells removed
- ¼ cup Almond Butter
- 3 Dates pitted
- ¼ tsp Cardamom ground
- 5 strands Saffron crushed
- 1 pinch Sea Salt
- 1 tbsp Shredded Coconut unsweetened
Instructions
- Using a blender or food processor, finely chop almonds, walnuts, pistachios and dates. Alternatively, you can chop them by hand as well.
- Place the finely chopped nuts, seeds and dates in a bowl and add ground cardamom, crushed saffron strands, sea salt and almond butter to the mixture.
- Bind them together and make balls from them.
- Roll the powerball nut truffles over shredded coconut.
- Eat the immediately or store in the refrigerator for later consumption.
Notes
- If the almond butter you have at hand is runny, refrigerate the truffles for sometime before consuming them.
- Alternatively, you can use other nut or seed butter. Experiment and see what works for you.
- If saffron is hard to find, skip it altogether. The powerball nut truffles will still taste amazing.
- You can customize them with nuts and seeds of your choice. You can even add gluten-free oats.
- You can try other spices too. Cinnamon, nutmeg or pumpkin spice are all good options.
- Prepare the powerball nut truffles in advance and in bulk to have them handy throughout the week.
